My taste in movies is a little fucked up, so there may be few agreements so in no particular order or genre:

The Dark Knight
Pee-Wee's Big Adventure
Walk Hard: The Dewey Cox Story
Office Space
Fight Club
40 Year Old Virgin
American Psycho
Stranger Than Fiction
Clerks 2
Empire Strikes Back

30 Days of Night
Collateral
Equilibrium

Grosse Point Blank
A History of Violence
Kiss Kis Bang Bang
Lucky Number Slevin
Shoot 'Em Up
Silent Hill
Sin City
Tears of the Sun

I'm with you on Lock, Stock, and Two Smoking Barrels. Tried to introduce some friends to it and they couldn't follow the dialogue though.

Along with that:

Buckaroo Banzai
The Day the Earth Stood Still (see it before seeing the remake)
Lord of the Rings trilogy
Unforgiven
Fargo
A Clockwork Orage
Pulp Fiction
Sin City

Well, if you're talking about anime I'd have to go with series more than movies, but here are some good movies:

Akira (of course)
Lily Cat
Afro Samurai
Appleseed 2004 and Ex Machina
Ghost in the Shell
Ninja Scroll
Read or Die
Vampire Hunter D, both the original and Bloodlust

For anime series I'd go with Cowboy Bebop FTW. Behind that are:
Trigun
Samurai Champloo
Witch Hunter Robin
Ghost in the Shell Stand Alone Complex
