Even if the rider could "handle" a big bike fresh out of the class, what about that ONE time they goose the throttle just a little too much, or grab just a little too much front brake -- the class teaches you the principles so that you know how to react, but real seat time is what hones these skills, and betters the odds that you'll react properly (and safely).
