I know it's not hot sauce but:
OTB's Authentic Mexico City Relish: Before preparing this I highly recommend donning disposable gloves, as otherwise the oil from the peppers will penetrate the skin and remain active for hours...... 10 fresh Red Savina Habanero Peppers 1 bunch green onions sea salt 2 limes Split the peppers and discard the seeds; slice the peppers thinly into a chiffonade (thin chiffon-like strips). Remove the roots from the onion ends and finely slice crosswise. Mix the onions and peppers together in a bowl and grate in about 1 tsp of the sea salt. Squeeze the juice from the two limes over the top and toss. Refrigerate for about an hour and serve cold. Great on omelettes, any mexican food, huevos rancheros....you get the idea. More flavor than most hot sauces and a good amount of heat. The red savina's SHUs are about 850,000 units, if you want something a little milder, try regular Habeneros, or Scotch Bonnets....they are in the 350,000 SHU range. Ps. If you don't use gloves and find yourself in pain, drop me a line and I'll tell you how to get relief, but don't say I didn't warn you........ |

sometimes i think its funny that these stupid plants devoloped their spicyness over millions of years in order to ward of wayward herbavoirs, and here we are harvesting them en mass for the single reason that they evolved to protect themselves.

Texas Pete Buffalo Wing Sauce is the cat's meow. Not really hot, but damn tasty.
